Ocean clam soup á la maredis
Ingredients
500 gr/ 18 oz. Maredis ocean clam meat250 gr/ 9 oz. mussels with shell 2 onions 1 small fennel 2 carrots 1-2 sticks of cellery 3-4 medium sized garlic cloves 1 small red chili, discard seeds 1 dl/3,5 oz. olive oil 2 cans tomatoes (diced) 4-5 dl/14-17 oz. white vine, non-alcoholic if desired 1 liter/36 oz. quality fish or chicken broth (water and boullion) 2-3 threads saffron (if possible) 1 tbsp parsley, chopped Fresh dill, to taste Cut vegetables into medium sized cubes. Grate or press garlic and cut the chili very small. Heat olive oil in a quality pot and lightly fry vegetables (they should not be brown). Add white vine and bring to boil. Add broth and tomatoes with dry spices. Add mussels and boil for ca. 2-3 min. Add salt and pepper to taste. Add ocean clam meat and take off heat. Leave for about 5-6 min.
